This recipe, which is super easy and yields some fluffy, golden pancakes will show you how you can make no milk pancakes from scratch!
Since no milk is being used in this recipe, I’ve employed two important techniques to make the pancakes flavorful and fluffy.
The first is to add more baking powder than usual. For each cup of flour, most pancake recipes typically add a teaspoon of baking powder. If you want your pancakes to be even more fluffy, as in this recipe, you must add one and a half teaspoons of baking powder per cup of flour.
The second technique I used to make the pancakes fluffy and moist is to beat the egg whites until stiff and incorporate them into the mixture in an enveloping way so that the pancakes have more volume.
Also, the type of flour used here is important. I used blanched almond flour, but I can also recommend using a softer flour like all-purpose or even cake flour for this recipe to obtain softer textured pancakes.
Ingredients for no milk pancakes

Eggs- Needed to help bind all the pancake ingredients together.
Butter- Adds more flavor to the pancakes.
Baking powder – Helps the pancake batter form bubbles which help them to become fluffy and airy.
Stevia – This is a type of sweetener that works for special diets like keto or low carb. So, if you’d like, you can use other types of sweeteners like regular sugar, erythritol, or even agave nectar.
How to make pancakes without milk
Gather all the ingredients for the pancakes in one place.
Then, separate the egg whites from the yolk. Next, beat the egg whites until stiff. Reserve the whites for a few minutes while preparing the rest of the pancake batter.
In a separate bowl, place the egg yolks, and the melted butter and mix them for a couple of minutes until they are perfectly integrated.
In a third bowl, sift the flour, with the baking powder and a little sweetener. If you want your pancakes to be more savory, don’t add the sweetener.
Integrate the flour, with the butter and egg yolk mixture. Whisk until smooth.
Lastly, add the egg whites in an enveloping way. Stir with a wooden or plastic spoon very gently. The idea is that the mixture is completely spongy.
Put a little oil spray on a nonstick skillet and heat the stove over medium heat. When the skillet is hot, put ¼ of the pancake mix in the hot skillet and cook covered for a couple of minutes.
Flip the pancake and cook for another minute on the other side. Remove the pancake from the skillet and repeat this process until the pancake batter is finished.
