Best ways to substitute for parmesan cheese in pesto
An awesome substitute for Parmesan cheese in pesto is Romano cheese. Indeed, Romano cheese is often used together with parmesan in many pesto recipes!
Regular American Romano cheese works in place of Parmesan in pesto recipes because both of those cheeses are hard and savory. Even though Romano is more sharp, tangy and salty, compared to the rich, nutty, umami Parmesan, a 1:1 substitute can be used.
Also, since Romano cheese is more salty than Parmesan, consider adding less salt to your pesto made with romano cheese. For example, most pesto recipes use ¼ teaspoon of salt, so consider reducing this to ⅛ teaspoon if you use Romano cheese to make your pesto recipe.
Pecorino Romano cheese
Pecorino Romano is a type of authentic Italian cheese that can be used in pestos. Pecorino has a bolder, saltier and tangier flavor when compared to American Romano cheese which means that it is best to omit salt altogether at first, then adjust to your taste.

Personally, I wouldn’t use mozzarella cheese in my pesto recipe if I had a choice due to its milder flavor compared to the sharp flavor of parmesan. However, in a pinch it can make an okay pesto. For the best results when blending mozzarella cheese into a pesto, keep the mozzarella cheese in the fridge right up until you’re ready to add it into the blender/food processor.
If you use it at room temperature it will be too soft and if you freeze it, then it might be too hard on your blender.
Can I use Cotija cheese instead of Parmesan in pesto?
Yes you can. Cotija cheese is another less popular cheese that is used in pesto recipes.
