Can I substitute almond flour for regular flour in sugar cookies?
Yes, you can. Almond flour makes a great 1:1 substitute for regular flour in most cookies, including sugar cookies. Therefore, if you were to find a sugar cookie recipe made with regular flour that you wanted to try with almond flour, a simple swap of the regular flour for equal parts almond flour would suffice.
It should be noted that almond flour does not contain the starch or the gluten that wheat flour has, so it won’t naturally create a stretchy dough that you’re used to with regular flour. You will need to add more eggs and even some xanthan gum to the recipe to help the cookies bind.

How to make sugar cookies with almond flour
Start by gathering all the ingredients in one place.
Microwave the shredded mozzarella cheese and cream cheese in a small bowl for 1 minute and mix to combine.
In a separate bowl cream the butter, sweetener, vanilla, and egg whites. Then add the baking powder and almond flour and continue mixing until the mixture is crumbly.
Next, add the melted mozzarella and cream cheese mixture to the flour mixture and stir.
Then use your hands to knead the dough until all the ingredients are fully combined. This will usually take 3- 5 minutes.
Shape the dough into a log, wrap it in cling wrap and refrigerate this for 30 minutes.
When the time has passed, remove the dough from the refrigerator and cut it into 12 slices. Preheat the oven to 350F.
Place each cookie dough slice on a baking sheet lined with parchment paper and bake the cookies at 350F for 15-18 minutes.
